Gluten Free For Good

More About Melissa

I’ve probably gained a good 5 pounds this week and may need a new wardrobe if I keep this frenetic style of baking up. But aside from that, it’s been a great week of testing GF mixes and creating yummy baked goods, many of which I did “improv” style, as our sweet friend at Gluten Free Bay says.

This carrot bread turned out wonderful and will definitely be part of my basic cache of easy GF recipes. This one’s a keeper!

spiced carrot bread

what you need
• 1/4 cup oil (I used grapeseed oil because it has a neutral taste and smell)
• 1/2 cup agave honey
• 1 egg, beaten
• 1/2 teaspoon vanilla
• 1 cup grated carrots
• 1-1/4 cup Pamela’s Baking Mix
• 1/2 teaspoon cinnamon
• 1/4 teaspoon allspice or something similar (cloves, nutmeg)
• 1/4 cup raisins
• 1/4 cup pecans

what you do
• beat oil, eggs, and honey together
• add vanilla
• mix in remaining ingredients (except raisins and nuts) and mix well
• fold in raisins and nuts
• pour into well greased loaf pan (I use glass loaf pans)
• bake in preheated 350º oven for 45 to 50 minutes (inserted toothpick or knife should come out clean; don’t over bake; you may need to put a sheet of tinfoil on top to prevent over-browning)

Mom, why do keep posting this amazing looking baked goods while I’m on a cleanse. All I want is a piece of that spiced carrot bread and a coffee. YUMMY!

  2. Melissa says:

Hey Tev – sorry about that! Try it next week. It’s SO good. Definitely worth the wait.

Sorry I haven’t had a chance to catch up and comment on how delicious your “experiments” look! I am flying out early tomorrow morning for a week so I’ve been busy …. it’s not that your stuff looks less than utterly yummy – quite the contrary.

I LOVE (adore, worship… nah, that’s going too far) spiced and carrot anything together! This looks great and rivals those blueberry scones I’m checking out …. mail some here and fast! Please? Pretty please?

Actually, you’re a horrible influence since I bought the Namaste brownie mix which was on super sale at out coop today. Jon is so excited (and so am I!). I’ll follow your lead of being a selfless, fearless gluten free baking tester and make some of those, hehe. Are you going to do a pumpkin bread/cupcake with the mixes? That’d be great – I’m planning one (for the record) when I get back. Thanks for posting these treats, I’m glad they’re all virtual though – for now.

Take care and have a great week. I will miss reading your blog this coming week.
